Chicken Enchilada Pasta



A delicious fusion of classic chicken enchiladas and comforting pasta, this dish is sure to be a hit with your family. Creamy, cheesy, and packed with flavor!

Ingredients:

  • 12 oz penne pasta
  • 2 cups cooked, shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup red enchilada sauce
  • 1 cup green enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions:

As directed on the package, cook the pasta

Once it's done, drain it and set it aside

Warm up the olive oil in a big pan over medium-low heat

Add the minced garlic and diced onion and saut until the onion is soft

Add the cooked chicken, red enchilada sauce, and green enchilada sauce, and mix them together

Toss the cooked pasta around in the pan after adding it

Add sour cream, Monterey Jack cheese, and cheddar cheese and stir until the cheese melts and the mixture is smooth

Add pepper and salt to taste

Add chopped cilantro as a garnish before serving

Chicken Tuscan Kale Pesto Risotto

Ingredients:

  • 1 cup Arborio rice

Instructions:

Stir in Arborio rice and cook for 1-2 minutes, allowing the rice to toast slightly

Begin adding warm broth to the skillet, one ladleful at a time, stirring constantly and allowing the rice to absorb the broth before adding more

Continue this process until the rice is creamy and cooked al dente, about 20-25 minutes

Stir in chopped Tuscan kale during the last 5 minutes of cooking, allowing it to wilt

Remove the skillet from heat, stir in grated Parmesan cheese until melted and combined

Adjust seasoning with salt and pepper if necessary

Serve hot, garnished with additional Parmesan cheese if desired

Egg in a Hole



A classic breakfast dish called "Egg in a Hole" is made with a fried egg and toast. It's delicious and easy to make. Many people like to eat it for a hearty and filling breakfast.

Ingredients:

  • 1 slice of bread
  • 1 egg
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions:

Make a hole in the middle of the bread slice with a glass or a cookie cutter

Put the butter in a nonstick skillet that is on medium-low heat

Place the piece of bread in the pan and toast it on one side for one to two minutes

Right away, turn the piece of bread over and crack the egg into the hole in the middle of it

Add salt and pepper to taste to the egg

Place a lid on top of the pan and let the egg cook for three to four minutes

If you want a runny yolk, cook it for longer

Take the Egg in a Hole out of the pan carefully, and serve it hot

Pressure Cooker Pulled Pork with Barbecue Sauce

Ingredients:

  • 4 lbs pork shoulder, boneless
  • 2 tsp smoked paprika

  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1 cup barbecue sauce

Instructions:

Put cumin, salt, black pepper, garlic powder, onion powder, smoked paprika, and brown sugar in a small bowl

Mix the spices together to make a dry rub

Make sure the pork shoulder is evenly covered with the spice mix by rubbing it on

Get the pressure cooker hot, and brown the pork all over

Put chicken broth in the pressure cooker and make sure the lid is tight

For about 90 minutes, or until the pork is soft, cook on high pressure

After letting the pressure go down on its own, take the pork out of the cooker

Use two forks to shred the pork, and throw away any extra fat

BBQ sauce, apple cider vinegar, Worcestershire sauce, and yellow mustard should all be mixed together in a different bowl

Mix the barbecue sauce and pork shreds together

Pull pork from a pressure cooker can be served on buns, in tacos, or any other way you like

Pumpkin Cupcakes with Caramel Apple Candy Corn Buttercream



For fall, these Pumpkin Cupcakes with Caramel Apple Candy Corn Buttercream are a great treat. A creamy and flavorful buttercream that tastes like a mix of caramel, apples, and candy corn is spread on top of the spiced and moist pumpkin cupcakes. Perfect for Halloween or any other fall event!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • For Caramel Apple Candy Corn Buttercream:
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 cup caramel sauce
  • 1/2 cup apple sauce
  • 1/2 cup candy corn, crushed for garnish

Instructions:

Start by heating the oven to 350F 175C

You can line a cupcake tin with paper liners

Put flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a medium-sized bowl and mix them together with a whisk

Put away

Mix the softened butter and sugar in a large bowl until the mixture is light and fluffy

Add the eggs one at a time and beat well

Then, add the pumpkin puree and mix well

Mix the dry ingredients in while adding the buttermilk and vanilla one at a time

Fill each cupcake liner about two thirds of the way to the top with batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After cupcakes cool in the pan for a few minutes, move them to a wire rack to cool all the way down

While the butter is soft, beat it until it's smooth

This will make the Caramel Apple Candy Corn Buttercream

Add the powdered sugar, caramel sauce, and apple sauce one at a time, mixing well after each addition

Spread or pipe the buttercream on the cupcakes after they have cooled

To make it look nicer, sprinkle crushed candy corn on top of the buttercream

Christmas Marshmallows



Your holiday treats will look festive and delightful with these Christmas Marshmallows added. They taste of peppermint, are fluffy, and can be formed into a variety of shapes with holiday themes. Ideal for giving to loved ones or enjoying by the fireplace!

Ingredients:

  • 3 envelopes 21g unflavored gelatin
  • 1 cup 240ml cold water, divided
  • 2 cups 400g granulated sugar
  • 1/2 cup 120ml light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • Red food coloring optional
  • Green food coloring optional
  • Powdered sugar, for dusting

Instructions:

In a mixing bowl, combine the unflavored gelatin and 1/2 cup of cold water

Let it sit for about 10 minutes to bloom the gelatin

In a saucepan, combine the granulated sugar, corn syrup, remaining 1/2 cup of water, and salt

Heat over medium-high heat, stirring until the sugar dissolves

Once dissolved, stop stirring and let it come to a boil

Insert a candy thermometer and continue boiling without stirring until it reaches 240F 115C

With a stand mixer or hand mixer on low speed, slowly pour the hot sugar syrup into the bloomed gelatin

Gradually increase the speed to high and beat for 10-12 minutes or until the mixture becomes thick and fluffy

Add vanilla extract and peppermint extract and beat for an additional 2 minutes until well combined

If desired, add red and green food coloring for a festive touch and mix until evenly colored

Line a 9x9-inch 23x23cm square baking pan with parchment paper and dust it generously with powdered sugar

Pour the marshmallow mixture into the prepared pan and smooth the top with a spatula

Dust the top with more powdered sugar

Let the marshmallows set at room temperature for at least 4 hours or overnight until they are firm and no longer sticky to the touch

Once set, use a knife or cookie cutters dusted with powdered sugar to cut the marshmallows into desired shapes

Re-dust with powdered sugar to prevent sticking

Serve your Christmas marshmallows as a festive treat, use them for hot cocoa, or package them as holiday gifts!

Fresh Skinny Margarita

Chopped Brisket with Raspberry Beer BBQ Sauce



A sweet and sour Raspberry Beer BBQ Sauce goes well with tender and flavorful chopped brisket. The combination of smoky, savory, and fruity flavors is a real treat.

Ingredients:

  • 1 brisket approximately 4-5 lbs
  • 1 cup raspberry preserves
  • 1 cup beer preferably a dark ale
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions:

Preheat the smoker or grill to 225F

Season the brisket with salt, black pepper, and smoked paprika

Place the brisket on the smoker or grill and cook for 6-8 hours, or until the internal temperature reaches 195F

While the brisket is smoking, prepare the BBQ sauce

In a saucepan, combine raspberry preserves, beer, ketchup, apple cider vinegar, Worcestershire sauce, Dijon mustard, minced garlic, salt, and black pepper

Simmer the sauce over medium heat for 15-20 minutes, stirring occasionally, until it thickens to your desired consistency

Once the brisket is done, let it rest for 15 minutes, then chop it into bite-sized pieces

Toss the chopped brisket with the prepared Raspberry Beer BBQ Sauce

Ingredients:

  • 1 lb boneless chicken thighs
  • 2 tsp ground cumin
  • 1 tsp paprika

  • 1 cup shredded red cabbage
  • 1/2 cup apple cider vinegar
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • 8 small tortillas
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese

Instructions:
