Grilled Cumin Chicken Tacos



You can make these tasty tacos with grilled cumin chicken, guacamole, and pickled red cabbage. The grilled chicken adds a smokey flavor, and the guacamole and pickled cabbage add a creamy and tangy touch. Great for a dinner during the week or a casual get-together with friends.

Ingredients:

  • 1 lb boneless chicken thighs
  • 2 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded red cabbage
  • 1/2 cup apple cider vinegar
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • 8 small tortillas
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese
  • Salsa for topping

Instructions:

In a bowl, combine ground cumin, paprika, salt, and pepper

Rub the spice mixture onto the chicken thighs and let them marinate for 30 minutes

In a separate bowl, combine shredded red cabbage and apple cider vinegar

Let it pickle for at least 15 minutes

Preheat your grill to medium-high heat

Grill the marinated chicken thighs for about 6-8 minutes per side or until fully cooked

While the chicken is cooking, mash the ripe avocados in a bowl and add lime juice, chopped cilantro, and salt to make guacamole

Warm the tortillas on the grill for about 30 seconds on each side

Assemble the tacos by placing a spoonful of guacamole on each tortilla, followed by grilled chicken, pickled red cabbage, sour cream, shredded cheese, and salsa
