This Slow Cooker Chicken Brunswick Stew is a hearty Southern dish full of chicken, vegetables, and tasty seasonings. Great for a warm meal on a cold day.
Ingredients:
- 1 lb boneless, skinless chicken thighs, cubed
- 2 cups frozen corn kernels
- 2 cups frozen lima beans
- 1 can 14
- 5 oz diced tomatoes
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 1 cup diced potatoes
- 4 cups chicken broth
- 1/4 cup BBQ sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions:
Put everything into the slow cooker and stir it all together
The chicken should be fully cooked and the vegetables should be soft
Cover and cook on low for 6 to 8 hours
Before you serve, use a fork to shred the chicken
