Baconless Breakfast Burrito



Savor a mouthwatering breakfast burrito sans bacon! This vegetarian version is wrapped in a warm tortilla and stuffed with colorful bell peppers, onions, and fluffy scrambled eggs. This is a simple, quick breakfast that's great for on-the-go.

Ingredients:

  • 1 large tortilla
  • 2 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • Salsa for garnish

Instructions:

A nonstick skillet should be heated to medium heat

Whisk the eggs, diced onions, diced bell peppers, salt, and pepper in a bowl

After adding the egg mixture to the hot skillet, scramble it until it is fully cooked

Spread the shredded cheese over half of the tortilla that has been placed on a clean surface

Over the cheese, spoon the mixture of scrambled eggs

Cover the cheese and eggs with the folded tortilla

After folding it again, place it back in the skillet and cook it for a few more minutes, or until the cheese has melted and the tortilla is golden brown

Take it off the stove and allow it to cool a little before slicing it in half

For extra taste, serve with salsa on the side
